The Jerusalem Artichoke (Helianthus tuberosus), also called the Sunchoke, is the tuber of a type of sunflower and resembles a longer, thinner potato. Globe Artichokes have been cultivated since ancient times, with probable origins in the Maghreb region of North Africa. Barley grass consists of the young green leaves of the barley plant, as opposed to the grain (for barley grain, refer to the Barley monograph ). Barley plants can grow under a wide range of soil and climatic conditions. However, superior soil conditions are reflected in plants with higher nutritional content, and commercial suppliers of barley grass strive for optimal soil conditions for the crop. Organic Wheat Grass
Wheatgrass is a food prepared from the cotyledons of the common wheat plant, Triticum aestivum (subspecies of the family Poaceae). It is sold either as a juice or powder concentrate. It is then freeze-dried (i.e. at a low temp) or served fresh. In comparison, standard wheat malt is harvested earlier and then dried at a higher temperature. Wheatgrass therefore manages to produce, and maintain, a highly nutritious content compared to normal wheat.
